Ingredients
Chicken burgers
- 1 jalapeño chilli trimmed, deseeded and cut into halves
- 3 garlic cloves
- 1 tbsp olive oil
- 1 tsp salt
- 40 g fresh coriander (approx. 2 bunches), leaves only
- 2 tbsp lime juice
- 2 skinless chicken breast fillets (approx. 720 g), cut into halves horizontally
Corn smash
- 1 tbsp olive oil
- 90 g brown onion cut in quarters
- 1 garlic clove
- 250 g frozen corn kernels
- 50 g sour cream
- ½ tsp salt
Assembly
- 3 radishes trimmed and cut into very thin slices
- fresh coriander leaves only, to serve
- 4 tsp pickled jalapeño chillies cut into slices
- 1 tbsp lime juice
- olive oil for frying
- 4 bread rolls cut into halves horizontally
- 1 avocado flesh only, cut into thin slices
- rocket to serve
