Ingredients

  • 750 g chicken legs, skin on, bone in (approx. 3 whole legs), cut into pieces (3-4 cm)
  • 20 g curry powder
  • 2 tsp salt
  • 15 - 20 dried chillies, deseeded and soaked to soften, cut into 5 cm length
  • 3 garlic cloves
  • 100 g shallots (approx. 10 shallots)
  • 5 candlenuts
  • 10 g fresh turmeric, peeled
  • 10 g fresh galangal (lengkuas), peeled
  • 60 g vegetable oil
  • 120 g water
  • 15 fresh curry leaves
  • 2 stalks fresh lemon grass, white part only, cut into 5 cm length and smashed
  • 300 g potatoes, cut into small wedges
  • 200 - 240 g coconut milk
  • 1 tsp sugar
