Ingredients

Chocolate Mousse

  • 1 ½ oz semi-sweet chocolate chips
  • 4 oz cream cheese cut into pieces
  • ½ oz confectioners sugar
  • ½ tsp vanilla extract
  • 1 pinch salt
  • 1 ½ oz heavy whipping cream chilled

Endive Salad

  • 3 ½ oz frisee endive cut into pieces (1 in.) (see Tip)
  • 2 oz Pink Lady apple cut into pieces (1 in.), plus extra to garnish
  • ½ oz walnuts
  • ½ tsp salt
  • 2 - 3 pinches ground black pepper to taste
  • 2 tsp apple cider vinegar
  • ½ oz vegetable oil

Ragù Pasta

  • ½ - 1 oz Parmesan cheese cut into pieces, to taste
  • 2 oz yellow onion cut into pieces
  • 1 oz carrots cut into pieces
  • 1 oz celery cut into pieces
  • 1 garlic clove
  • ½ oz olive oil
  • 5 oz lean ground beef crumbled into pieces
  • 8 oz crushed tomatoes
  • ½ tsp salt
  • 1 pinch ground black pepper
  • 1 pinch sugar
  • 1 tsp unsalted butter
  • 3 ½ oz beef stock
  • 3 fresh basil leaves
  • 4 ½ oz dried penne pasta
  • fresh raspberries to garnish
