  • 50 g coconut oil
  • 15 g garlic cloves
  • 65 g shallots
  • 10 g galangal
  • 1 cm fresh turmeric
  • 1 cm fresh ginger
  • 100 g fresh red chillies
  • 10 g dried chillies (approx. 10 pieces), deseeded, soaked to soften
  • 3 candlenuts
  • 2 stalks fresh lemongrass white part only
  • 800 g chicken thighs, with skin and bone
  • 50 g toasted coconut paste (kerisik)
  • 100 g coconut cream
  • 1 - 2 tsp salt adjust to taste
  • 45 g palm sugar (gula Melaka)
  • 3 kaffir lime leaves
  • 1 turmeric leaf thinly sliced
