Ingredients

Bagels

  • olive oil, for greasing
  • 920 g water
  • 250 g milk
  • 3 tsp dried instant yeast
    or 30 g fresh yeast, crumbled
  • 1 Tbsp sugar
  • 520 g strong white bread flour, plus extra for dusting
  • 3 tsp fine sea salt
  • 1 egg yolk
  • 1 Tbsp water
  • 1 Tbsp sesame seeds, for sprinkling
    or 1 Tbsp poppy seed, for sprinkling

Bacon Jam

  • 3 garlic cloves
  • 200 g red onions, quartered
  • 500 g smoked bacon, cut in pieces (1-2 cm)
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar
  • 1 tsp orange zest, finely grated
  • 1 tsp dried thyme
  • ¼ tsp ground ginger
  • 1 star anise
  • 2 pinches ground black pepper
  • 150 g coffee, brewed
  • 60 g cider vinegar
  • 60 g orange juice
  • 40 g bourbon whisky

Eggs

  • 4 medium eggs (depending on the number of portions)
  • 500 g water
