  • 100 g Indonesian white spice paste room temperature
  • 400 g cooked basmati rice refrigerated overnight
  • 15 g red bird's eye chillies cut in thin slices
  • 50 g sweet soy sauce (Kecap Manis)
  • 50 g fresh choy sum (chaisim), cut in 5 cm length
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • 20 g crispy fried shallots
  • 3 sunny side eggs
  • ½ tsp chicken stock powder
  • garlic crackers to serve
