Ingredients

  • 200 g basmati rice
  • 60 g full cream milk
  • 1 pinch saffron threads pounded
  • 4 whole cloves
  • ½ tsp black peppercorns
  • 1 cinnamon quill
  • 3 cardamom pods (green)
  • 4 cardamom pods (black)
  • 2 dried bay leaves
  • 60 g ghee (see Tips)
  • 3 tsp ginger paste (see Tips)
  • 3 tsp garlic paste (see Tips)
  • 1 - 2 brown onions (approx. 180 g), cut into quarters
  • 1 fresh long green chilli trimmed and cut into halves
  • 280 g fresh tomatoes (approx. 2-3), cut into quarters
  • ½ tsp ground turmeric
  • 3 tsp ground cardamom
  • 1 ½ tsp ground cumin
  • 1 ½ tsp garam masala (see Tips)
  • 100 g natural yoghurt plus extra for serving
  • 250 g cauliflower cut into small florets (1-2 cm)
  • 140 g potatoes cut into pieces (1.5 cm)
  • 100 g carrots cut into julienne
  • 2 tsp salt
  • 50 g frozen green peas
  • 1000 g water
  • 4 eggs
  • fresh mint leaves torn into pieces, for garnishing
  • fried shallots for garnishing
  • roasted unsalted cashew nuts for garnishing
