  • ½ - 1 oz maple sugar, to taste (see Tip)
  • 1 tbsp water
  • 1 tbsp lemon juice
  • 5 ½ oz unsalted butter, room temperature, cut into cubes (½ in)
  • 3 egg yolks, from large eggs
  • 1 pinch salt, to taste
  • 1 pinch ground black pepper, to taste

Poached Eggs

  • 4 large eggs
  • 60 oz water
  • 1 ½ oz vinegar
  • 2 English muffins
  • 2 ½ - 3 ½ oz smoked salmon, cold smoked, sliced to serve (see Tip)
  • fresh chives, thinly sliced
