Ingredients

Chocolate brownie

  • 230 g unsalted butter, cut into pieces, plus extra for greasing
  • 440 g Rapadura sugar, or raw sugar
  • 1 tsp baking powder
  • 70 g Dutch cocoa powder
  • 100 g plain flour
  • 200 g dark chocolate (min. 55% cocoa solids), broken into pieces
  • 1 pinch sea salt
  • 4 eggs
  • 1 tbsp natural vanilla extract

Chocolate custard

  • 200 g milk chocolate, broken into pieces
  • 2 eggs
  • 500 g full cream milk
  • 40 g cornflour

Raspberry coulis

  • 250 g fresh raspberries, or frozen raspberries, thawed
  • 100 g caster sugar
  • 20 g lemon juice (approx. ½ lemon)

Mascarpone layer

  • 500 g mascarpone cheese
  • 100 g caster sugar
  • 3 eggs, separated
  • 1 pinch sea salt
  • 6 tbsp Drambuie (50 g)
  • 250 g fresh raspberries, or frozen raspberries, thawed and well drained, plus extra for garnishing
  • 50 g milk chocolate, shaved, for garnishing
