Sugar Stages Mode 

What is it?

Sugar stages are the different levels of consistency that sugar reaches when it is heated. During this process, the sugar changes in terms of texture, colour, and taste, depending on the temperature, time and proportion of water and sugar. This allows you to create different types of sweets (e.g. fudge, toffee) or confections (e.g. caramel, honeycomb) using Guided Cooking.

How does it work?

Sugar cooked to different temperatures produces different textures and flavours – from fudge (112-116°C) to liquid caramel (170°C). Sugar Stages mode precisely cooks ingredients to these specific temperatures.

Thermomix® Cleans Itself!

Use Pre-clean mode after Sugar Stages to help remove the stubborn sugar from your mixing bowl. Using spatula, immediately scrape off any caramel left on rim of mixing bowl so mixing bowl lid closes securely then add 1000 g water and 1 Tbsp vinegar and start Pre-clean mode.

Top Tips:

  • • To prevent discolouration, the liquid in which the food is cooked needs to have an acidic ingredient, such as vinegar, apple juice, wine, lemon, or tomatoes.
  • • Fat will not drain away when slow cooking meat, so it’s best to trim away any fat before starting.
  • • For a deeper flavour in your finished dish, try using basic High Temp. recipes to brown your meat and sauté or caramelise onions or shallots before you start slow cooking.
  • • Add spice or herbs at the beginning of cooking to further enhance the flavours of your dish.
