Cider-brined pork chops

  • 350 g cider (see Tip)
  • 30 g sea salt, flakes
  • 1 tbsp rosemary, dried, chopped
  • 1 tbsp sage leaf, dried
  • 1 ½ tsp thyme, dried
  • ½ tsp black pepper, ground
  • 4 - 6 pork loin chops (approx. 350 g each)
  • grapeseed oil, for brushing

Apple dressing

  • 1 apple, type Granny Smith, peeled, cored and cut into quarters
  • 2 tbsp cider vinegar
  • 2 tsp maple syrup, pure
  • 90 g grapeseed oil
  • 1 tbsp wholegrain mustard
  • 6 sprigs chive, fresh, cut into quarters
