Ingredients

Orange and thyme glaze

  • 2 oranges, peel (no white pith) and reserve juice
  • 2 garlic cloves
  • 5 g fresh thyme, leaves only
  • 40 g honey
  • 10 g Dijon mustard, gluten free

Turkey

  • 2500 g turkey buffe, thawed
  • 500 g water, plus extra if needed

Cherry and cranberry sauce

  • 4 pieces orange peel, no white pith
  • 20 g brown sugar
  • 300 g black cherries, pitted and frozen
  • 50 g dried cranberries
  • 100 g freshly squeezed orange juice
  • 30 g red wine vinegar
  • 60 g water

Gravy and vegetables

  • 1 tsp cornflour
  • water, as required (for a total of 300 g)
  • 500 g Dutch baby carrots, trimmed
  • 500 g fresh green beans, trimmed
  • 100 g feta cheese, crumbled
  • 1 tbsp lemon juice
  • ground black pepper, to taste
  • fresh thyme, to garnish
