Ingredients

  • 220 g wholemeal spelt flour
  • 4 makrut lime leaves, veins removed
  • 1 egg
  • 40 g water
  • 60 g extra virgin olive oil
  • 6 spring onions/green onions, trimmed and cut into quarters
  • 10 sprigs fresh coriander, leaves only
  • 80 g Thai green curry paste (see Tips)
  • 100 g canned cannellini beans, no-added salt, rinsed and drained
  • 500 g chicken mince
  • 17 g fish sauce
  • ¼ tsp ground black pepper

Assembly

  • 1 egg yolk, lightly beaten
  • ½ tsp tamari sauce
  • 1 tbsp sesame seeds

Salad

  • 120 g mixed salad leaves
  • 120 g carrot, peeled and grated
  • 30 g eschalot, finely sliced
  • 20 g freshly squeezed lime juice
  • 20 g rice bran oil
  • 1 Lebanese cucumber, sliced
  • 4 sprigs fresh coriander, leaves only, roughly chopped
  • ground black pepper, to taste
