Ingredients

Naan Breads

  • 2 oz unsalted butter, cut into pieces
  • 5 ½ oz water
  • 1 tsp dried instant yeast
  • 2 oz yogurt
  • 11 ½ oz all-purpose flour
  • 3 tbsp oil
  • 2 pinches sugar
  • ½ tsp salt

Spiced Cauliflower

  • 25 oz cauliflower florets, cut in halves (approx. 1 lg. head)
  • 14 oz canned chickpeas, drained
  • 1 garlic clove
  • 1 ½ oz honey
  • 1 ½ oz soy sauce
  • 1 oz peanut butter
  • 1 tsp dried ground ginger
  • 1 oz water
  • 1 tsp ground smoked paprika
  • 1 - 2 pinches dried chili flakes
  • 1 - 2 pinches ground black pepper
    or 1 - 2 pinch ground white pepper

Mint Feta Dip

  • 8 mint leaves
  • 4 sprigs fresh dill, leaves only
  • 5 ½ oz feta cheese, cut in pieces
  • 1 tbsp freshly squeezed lemon juice
  • 1 oz yogurt
  • 2 ½ oz cucumber, cut into pieces

Matcha Tahini

  • 1 tsp cilantro, leaves only, plus extra to garnish
  • 2 ½ oz tahini
  • 3 ½ oz water
  • ½ tsp matcha powder
  • 2 - 3 pinches salt

Assembly

  • 7 oz green apples, cored and sliced
  • 7 oz avocados, sliced (¼ in.)
  • 2 lemons, quartered
