Ingredients

Nuoc cham dressing

  • 2 garlic cloves
  • 1 fresh bird's eye chilli, trimmed and deseeded if preferred
  • 60 g fish sauce (see Tips)
  • 60 g white vinegar
  • 60 g water
  • 2 tbsp caster sugar
  • 2 tbsp lime juice

Shredded chicken salad

  • 600 g water
  • 1 tsp Chicken stock powder or paste (see Tips)
  • 500 g chicken breast fillet, cut into pieces (8 cm)
  • 150 g vermicelli noodles
  • 100 g snow peas, trimmed and cut into thin strips
  • 150 g bean sprouts
  • 2 carrots, cut into julienne
  • 10 sprigs fresh mint, leaves only
  • 10 sprigs fresh coriander, leaves only
  • 2 tbsp roasted unsalted peanuts, to sprinkle
  • 2 tbsp fried shallots, to sprinkle
