  • 100 g stem ginger in syrup, drained, reserving 30 g syrup
  • 90 g unsalted butter, diced
  • 110 g light brown sugar
  • 1 large egg
  • 350 g gluten free plain white flour, plus extra for dusting
  • 1 pinch fine sea salt
  • ½ tsp xanthan gum
  • ½ tsp gluten free baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves

Royal Icing

  • 125 g granulated sugar
  • 1 egg white, from medium egg (see tip)
  • 1 tsp lemon juice
