Cider-brined pork chops

  • 350 g alcoholic apple cider (see Tip)
  • 30 g sea salt flakes
  • 1 tbsp dried rosemary
  • 1 tbsp dried sage
  • 1 ½ tsp dried thyme
  • ½ tsp ground black pepper
  • 4 - 6 pork loin chops (approx. 350 g each)
  • grapeseed oil, for brushing

Apple dressing

  • 1 Granny Smith apple, peeled, cored and cut into quarters
  • 2 tbsp apple cider vinegar
  • 2 tsp pure maple syrup
  • 90 g grapeseed oil
  • 1 tbsp wholegrain mustard
  • 6 sprigs fresh chives, cut into quarters
