  • 2 oz unsalted butter, cut into pieces, plus extra to serve
  • ½ tsp baking soda
  • 2 oz pecans
  • 1 tsp vanilla extract

Pancakes

  • 2 oz unsalted butter diced (½ in.)
  • 8 oz whole milk
  • 2 ½ oz canned pumpkin purée
  • 2 large eggs
  • 8 oz all-purpose flour
  • 1 oz sugar
  • 2 tsp baking powder
  • 2 tsp homemade pumpkin spice mix (see Tip)
    or 2 tsp pumpkin pie spice
  • ⅛ tsp salt
  • 3 tsp oil, vegetable, to fry, divided
