  • 400 - 500 g chicken thigh fillets, cut into strips (1 cm)

  • 2 carrots, cut into pieces
  • 2 celery stalks, cut into pieces
  • 200 g cabbage, cut into pieces
  • 300 g jasmine rice
  • 500 g water
  • 400 g coconut milk
  • 1 ½ tbsp oil, for frying
  • 6 eggs
  • ½ - 1 tsp chilli powder
  • 2 spring onions/shallots, cut into thin slices
