  • 200 g mixed vegetables, white (e.g. celeriac, onions, garlic, leek), cut in pieces as needed
  • 4 sprigs fresh mixed herbs (e.g. rosemary, thyme, parsley), leaves only
  • 150 g coarse sea salt (see tip)
  • 100 g white wine
  • 1 dried bay leaf
  • 1 clove
  • 5 coriander seeds
