  • 3 cm piece fresh ginger, peeled
  • 80 g rice wine vinegar
  • 70 g water
  • 50 g olive oil
  • 10 g sesame oil
  • 110 g shiro (white) miso paste

Coleslaw

  • 150 g purple cabbage, cut into pieces (approx. 3 cm)
  • 150 g green cabbage, cut into pieces (approx. 3 cm)
  • 100 g carrots, cut into pieces (approx. 3 cm)
  • 1 red capsicum, deseeded and cut into pieces (approx. 3 cm)
  • 2 spring onions/shallots, trimmed and cut into thirds
