Ingredients

Curry Powder

  • 30 g coriander seeds
  • 30 g cumin seeds
  • 2 Tbsp dried fennel seeds
  • 40 g long grain rice
  • 10 cardamom pods
  • 5 cloves
  • 10 dried curry leaves
  • 1 cinnamon stick

Beef Curry

  • 6 cardamom pods
  • 1 cinnamon stick
  • 1 tsp ground fenugreek
  • 12 cloves
  • 1 tsp black peppercorns
  • 1 onion, quartered
  • 4 garlic cloves
  • 20 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 1 stalk fresh lemon grass, white part only
  • 2 fresh red chillies, deseeded
  • 1 tsp ground turmeric
  • 12 dried curry leaves
  • 50 g olive oil
    or 50 g ghee
  • 400 g tinned chopped tomatoes
  • 1000 g braising steak, cubed (3 cm)
  • 400 g coconut milk
  • 2 tsp fine sea salt
  • 2 Tbsp vinegar
  • rice, steamed, for serving
