  • 500 g water
  • 1 tbsp olive oil, for frying
  • 8 chicken thighs, bone in and skin on
  • 2 tsp ground coriander
  • 2 tsp sea salt flakes
  • 5 sprigs fresh coriander, leaves only, for garnishing
