Ingredients

Almond milk ice cream

  • 280 g almond milk (see Tips)
  • 220 g pouring (whipping) cream
  • 2 egg yolks
  • 1 tsp vanilla bean paste
  • 20 g honey
  • 140 g raw sugar

Orange puddings

  • 70 g unsalted butter, cut into pieces (2 cm), plus extra for greasing
  • 140 g caster sugar
  • 120 g day old bread
  • 200 g almond milk (see Tips)
  • 2 eggs
  • 1 orange, juice and finely grated zest, no white pith
  • ½ tsp ground cinnamon
  • 120 g wholemeal plain flour
  • 1 tsp bicarbonate of soda
  • 800 g water
