Ingredients

Lime-pickled onions

  • 2 red onions, cut into thin rings
  • 1 tbsp sea salt flakes
  • 2 limes, juice only
  • 1 fresh green chilli, deseeded and cut into thin slices

Chilorio

  • 1000 g pork shoulder (fatty), cut into pieces (3 cm)
  • 1300 g water
  • 40 g ancho chillies, stems removed
  • 2 tsp fine salt
  • 60 g apple cider vinegar
  • 6 garlic cloves
  • 1 tsp cumin seeds
  • 5 sprigs fresh thyme, leaves only
  • 1 tbsp dried oregano
  • 1 piece orange, zest (1 x 2 cm), no white pith
  • 1 orange, juiced
  • 1 lime, cut into wedges, to serve
  • tortillas, to serve
