Ingredients

  • 20 g extra virgin olive oil, plus extra for greasing
  • 50 g Parmesan cheese, crust removed and cut into pieces (3 cm)
  • 50 g brown onions, cut into halves
  • 1 ½ - 2 garlic cloves, to taste
  • 4 sprigs fresh flat-leaf parsley, leaves only
  • 40 g breadcrumbs
  • 400 g beef mince
  • 2 eggs
  • ½ tsp freshly ground black pepper
  • 2 tsp salt
  • 50 g Gruyère cheese, cut into slices (2-3 mm)
    or 50 g cheddar cheese, cut into slices (2-3 mm)
  • 25 g fresh baby spinach leaves
  • 450 g yellow capsicum, cut into pieces (3-4 cm)
  • 4 - 5 fresh basil, leaves only
  • 400 g chopped tomatoes, canned or fresh cut into pieces (2-3 cm)
  • 200 g water
  • 1 pinch sugar (optional)
