Ingredients

Bolognese Sauce

  • 65 - 130 g Parmesan cheese, cut in pieces (3 cm), to taste
  • 130 g mixed vegetables (e.g. celery stalk, carrots and onions), cut in pieces
  • 25 g extra virgin olive oil
  • 500 g mixed minced meat (half pork and half beef)
  • 65 g dry white wine
  • 200 g tinned chopped tomatoes
  • ½ - 1 tsp fine sea salt, to taste
  • 2 - 3 pinches ground black pepper, to taste

Béchamel Sauce

  • 670 g milk
  • 55 g unsalted butter, diced
  • 65 g plain flour
  • ½ tsp fine sea salt
  • 1 pinch ground nutmeg

Lasagne Assembly

  • 70 g dried lasagne pasta sheets, approx. 4 sheets (10 cm x 20 cm)
  • unsalted butter, for topping
